Summer ice blocks

Ingredients


1 cup pineapple, core and skin removed and diced 

Juice of 1 lime 

Juice of 1 lemon 

3 tablespoons honey or pure maple syrup

1 cup filtered water  

¼ cup fresh mint leaves 

Serves: 6 (depending on size of mould)

Preparation time: 10 minutes

  1. Blend the pineapple in a high-speed blender until broken down. 
  2. Add remaining ingredients and blend until well combined.  
  3. Pour the mixture into an ice block mould and place in the freezer to set.

These ice blocks are free from refined sugars, colours, and additives and are great for kids and adults alike! Have these on hand in the freezer over the summer months for a colourful, vitamin C-rich, cooling snack.
